Limas have a delicate flavor and are a good source of cholesterol lowering fiber. They are high in fiber and very good for individuals with diabetes or who are hypoglycemic. One cup of lima beans contains 24.9 % of the daily value of iron. Our Dad, "Paul" loved them cooked with ham hocks, chopped onion or simply cooked and served with salt and butter. When cooking, they do produce a foam, so you need to drain as well as rinse well before cooking and removed any sand or stones after you have shelled them.
